Summer Squash Green Chile Casserole

Our garden is overgrown with summer squash as of now because of the Central Valley heat waves we have had lately.  So I am having to find dishes to make that use 2-4 or more squash per dish as to not waste.  
Currently daily harvest in the Earthy Birds garden, a whole bunch of greens and squash...  To be honest, the two things I am good at growing...  Maybe one-day tomatoes and I will be as good of friends.  

This recipe was inspired by my mom who was visiting recently and told me she has been using leftover veggies and making enchiladas.  Instead of enchiladas, I decided to keep tortillas flat and stack the VEG, but the concept is still the same....  Vegetarian-friendly, gluten-free, and lower in carbs.  

This recipe is wonderful because it can be made in A.M. and bake when ready, feeds 6-8, and freezes well so make 2 and freeze one.  




Summer Squash Green Chile Casserole
28 oz can green chile sauce
corn tortillas
6 medium squash or 4 large sliced
1 small white onion sliced
5 cloves of garlic (whole)
2 C shredded mild cheddar
4 Tbs grated cotija cheese
1 Tbs olive oil
1 Tbs zahtar 
S+P to taste

Preheat oven to 450 and find an 8x9 inch cooking dish ( I do deep casserole so I can do several layers).

In a large skillet at Med / High heat add olive oil, once heated add onion cook 1 min, add squash cook 3 min, add garlic and zahtar cook until all veg tender but not mushy.  If you don't have zahtar  (a Middle Eastern spice blend made with dried thyme, toasted sesame seeds, ground sumac, and salt) you can sub with Italian seasonings or even herbs de provence.  Remove from heat start stacking!


I add 1/3 C of the green chile sauce to the bottom of the baking dish and stack corn tortillas, I use small street taco tortillas but you can use what you have on hand and may need to cut them in 1/2 to make an even layer of tortilla, I add an even layer of veggies, sprinkle 1 Tbs of cotija and one handful of cheddar.  

Continue layering however many layers fit in your dish, tortilla, sauce, veggies, cheeses, tortilla, sauce, veggies, and cheeses.  I end with veggies on top and add one more sprinkle of cheeses and a splash of sauce, for sauce being mindful that we don't want too much on each layer as it will make the casserole soggy.  Bake covered 20 minutes, after 20 remove foil and bake to make cheese bubbly and yum for another 10-15 min.  Since your veggies are cooked you are more just wanting your tortillas to get tender and cheese melted. Once removed from the oven let the casserole cool 5 minutes before cutting so casserole sets a little and doesn't cut runny.  
Serves 6-8, lasts 1 week in the fridge, and 1 month in the freezer.

Almost ready to write again......


Sorry been out of service, but here is what I've been working on.  
Got an AA in a year in journalism, and now moving on to Fresno State for another B.A. for journalism.  Food and jewelry has become my new favorite things to style/photo and write about.

Thrifty Keto Butter Pecan Smash Cookies


When I was younger and living with my Grandparents for a short time, my Grandma would take me with her on her weekly shopping trips.  We would do the pharmacy first, and when we concluded that part she would always kick down a thrifty ice cream cone.  I was a sucker for whatever my Grandma did.  I thought she was the prettiest, classiest, smartest Grandma in town.  She would get butter pecan ice cream, so I would get butter pecan ice cream.  She would wear a black purse, I would wear a black purse.  My love of purses must have come from her, although in my older years I am starting to prefer shoes (she liked her shoes too).  Still to this day, the only ice cream I get from now RiteAid is butter pecan ice cream.  Although I stand there and want to get black cherry on occasion, (the other flavor my Grandma rotated through but not too frequently), I always end up with the butter pecan. 
Recently while playing on Pinterest I saw a few keto recipes for butter pecan cookies, I right away got on trying to recreate them to my annoying dietary restrictions due to my celiac.  This is the recipe that I am in love with.  It has the flavor of butter pecan ice cream in a flaky tea cookie. 

Thrifty Keto Butter Pecan Smash Cookies

2 Tbs brown rice flour
¼ tea salt
½ C roasted chopped pecans

Preheat oven 325
Cream butter, sweetener, add vanilla, and salt.  Once combined I add ¼ c at a time of my almond meal and then my Brown Rice Flour.  After my mixture is well mixed I fold in my pecans.  Using a small ice cream scoop such as this one

 I scoop mixture onto parchment or silicone lined cookie sheet another must have for a no waste baking existence.

I bake for 7 minutes and then I pull sheet out and smash the cookies with a small jar bottom.  I then add back to oven and cook for another 10 minutes.  Or until smashed edges are golden brown. 

Remove from oven and let come to room temp before handling so they don’t crumble.  These are a crumbly cookie for sure.  I let cook and put into mason jars and keep them in fridge until I am having a hankering.  They store lovely in fridge for up to 10 days.



Recipe makes 2 dozen cookies ranging in 5 carbs for 2 cookies if you make them the small scoop size.  Perfect for tea and gift giving.

Backyard Florist

How to not have to spend $15 a week on a great floral bouquet.   Here is the info pals.   For me flowers give me a pep in my step, and while in my 20’s I would wear black and at night go cut and borrow neighbors floral landscaping for my flowers (I know not nice but I would take small amounts from several neighbors, they never knew ;)  or did they {:))!  Since maturing, I have resorted to growing my own.  Here are my picks for having flowers in the back or front yard to pick in lieu of having to buy or help my neighbors prune is what I would say. 

My top picks:

Hydrangea

We rented a house that had a Hydrangea bush and it took over a whole side of the house.  I literally supplied a friend’s wedding with our Hydrangeas as well as brought countless arrangements to friends and family those few years living in that location… I dried them for gorgeous wreaths; the possibilities are endless with these beauties.  Once in vases these lovelies will last 7 days in clean water and they look lovely when they start to dry so they are ideal for outdoor floral arrangements.

Fever Few

Just sweet for everyday flowers.  Easy to care for and arrange well in any arrangements.  Also can stay lovely in a cool, clean water arrangement.  I will go into my arranging categories in next post.  We have the stuffer flowers (they can be stuffed and stay lovely) and the clean water floral (they need less stems, and clean water to stay fresh).  These Daisy like cuties are perfect for the kiddos to grow and cut for arranging as well.  



Zinnia 

I was not a huge fan until one fall I got an email saying the local Zinnia grower in Yolo county wanted folks to come take what they wanted of the flowers before she turned over her soil for the next planting.  My girls and I drove about 20 minutes out and went nuts literally filling 5 buckets to the brim. We made an insane amount of arrangements for friends and family and our community for the Jewish Holidays.  It was such a treat and now I love these guys.  So easy to grow and can be used for both elegant and casual arrangements.  The stems are long and you get about 2 months of use out of a bush that blooms, it is also a drought happy bush once established.  
 

Roses


This is a no-brainer.  You get an amazing bang for your buck if you have a successful bush or 3.  Having a few colors is ideal.  But you can do everything you need with a white or yellow rose bush.

Lavender

Because the herbalist in me uses Lavender for literally everything I had to add it.  If you are not using it for oils, baking, facial care, and all the things I use it for you can still make a mean arrangement using Lavender.  They are simple and if well taken care of just keep growing and growing.  Offering literally months of flowers and fragrance.  Spanish, French or English they are all wonderful.  My personal favorite is English.  I like the shape of it and how it dries but again any one is super.


Silver Dollar Eucalyptus


Well to be honest any Eucalyptus works for me.  But Silver Dollar is more my style in shape and ability to dry.  I love that the scent is more delicate than the bulky Baby Blue Eucalyptus, it can be overwhelming. 



Peruvian lily

These cuties are lovely, they turn into nice sized shrubs and will give you an abundance of stems to play with while they are flowering.  Once arranged these are so great because they last up to 9 days in a vase with good air and clean water. 
 


AMARANTH

THESE ARE JUST SO FUN TO POP INTO ARRANGEMENTS, GIVING THEM SO MUCH DEPTH, AND HEIGHT.  THEY STAY LOVELY FOR A WEEK OR MORE WITH PROPER ARRANGING (ANOTHER POST COMING).  These are easy to grow and you get an amazing amounts to play with with one plant.  Oh and you can also dry it, eat it don’t get me started.  My amaranth cherry pot recipe will be up in a couple weeks. 


Baby’s-Breath

I know it’s not everyone's style, but for me I just love it.  I love that they can stand alone in an arrangement and compliment arrangements as well.  I love that they don’t smell and just look like old fashion loveliness.  These are such great little plants to have because they can grow large and be used for months, they also require less water for us drought prone CA dwellers.



Rosemary/Sage

Double of course for culinary uses but these are shrubs you need in your backyard.  They make arrangements smell divine, and give them depth.  They dry amazing for wreaths as well.  I let one Sage shrub bolt for arranging and my kitchen sage of course I make sure stays trimmed.
