Cocoa Pavlova

So this happened....
And thank my lucky stars it is Keto.  Feeling depressed about my Keto sentence I did a little Pinteresting and a little recipe fudging and came up with this one....   I will perfect it, and what I told my girls was everyone is getting Pavlova for Birthday's this year.  You get a Pavlova and you get a Pavlova!  Hey who are you?  You need a Pavlova?  Done.....

So here it is my pals.


Cocoa Pavlova 
& Berries with coconut milk whip

Pavlova items:

8egg whites 
1 C Low carb sweetener, I used Splenda
2 TBS Cocoa Powder
1 TEA vanilla extract

Toppings:

1 C clean raspberries 
1 C clean blueberries
2 C sliced strawberries
1 Can of Coconut Milk (refrigerated overnight before use) 
1 TBS powder sugar
1 TBS cocoa powder

The How:

Preheat oven 350 degrees.
Prepare a cookie sheet with parchment and draw 2x  8 inch or so in diameter circles as your reference.  Make sure circles are 3 or more inches apart as these little babies spread when baking.  Make sure to put pencil side towards cookie sheet.

Separate whites from yolks and add whites only to mixing bowl, start beating on high speed until eggs turn foamy.  Start adding sweetener 1 TBS at a time whilst continuing blending on high speed.  Once sweetener incorporated add vanilla.  Blend until you have stiff peaks, or can turn bowl upside down with little movement.  Fold in 2 TBS cocoa 1 TBS at a time.  Spoon or use a large angled icing spatula to layer the mixture on cookie sheet within the circles.  Use all of mixture, it will be high and awkward but promise it will get where it needs to be...


Add to oven and cook 10 minutes.  Then drop heat to 300 and let cook for 30 more minutes.  When time is up turn off oven and allow the Pavlova to sit in oven for 30 minutes.  While cooking I whip my coconut milk whip cream on high and add 1 tbs splenda to it but that's a treat and totally not necessary.  Take out of oven and add to a rack to cool.  They can be stored or used right away.  I layer Pavlova with coconut milk whip cream and berries on each layer and than sift my pow and coco sugar on top before serving.  I have also after whipped the coconut milk whip folded in crushed blackberries or cherries for the whip to be extra fancy.  However it shakes out this little guy will be inhaled.   Buuuuut if not keep overnight in fridge and enjoy again the next day.


Low carb, grain free goodness....  Less than 5 carb for a dessert is my kinda party pals!
