These are super yum almost Ricolllaaaa esque and they actually work with soothing scratchy throats!
4 bags ginger tea or 4 heaping tbs
of herbs
2 bags chamomile tea or 2 heaping
tbs of herbs
2 cups sugar either coconut or brown
depending on how sugar free you are
3 cups powdered sugar
Candy thermometer!
I do 3 cups of water to four tea
bags ginger and 2 bags chamomile works well for a nice strong tea. You can, of
course, divide that in half depending on taste.
Steep the herbs/tea in boiling water for 15 minutes.

In a pie tin add powdered sugar and make molds with the
bottom of a teaspoon measuring spoon!
Add tea to sugar into a stock pot and boil, using the following ratio.
1 part liquid: 1 part sugar
less will make it difficult to reach the hard crack stage necessary for a good, solid lozenge.
You can use brown sugar or coconut sugar is what I use.
Each combination will take different cooking times.
- Add your sugar to your tea and heat over med-high.
- Stir until sugar is completely dissolved.
- Bring to a boil and DO NOT STIR AGAIN.
- At (150oC), remove from heat.
Pour mixture into powdered sugar molds!
Allow to set until firm. Just leave em! No messing with them!
When it's time to demold the lozenges i.e they are super hard, stir them around in the powdered sugar and sift away excess. Keep in a sealed container in a cool place for up to 6 months.
I will be making these again with other fun herbs… Such as dandelion root for my hubby’s all to
often upset tummy! This is something fun
to also do with the kids, they need to stay a little further away when pouring into molds but they will love watching the science of the candy in the powdered sugar, they love watching mommies make everything! They think you are super hero! These are also great for kids because they
have no added funky stuff that halls and store bought lozenges tend to have, so you can give them one and tell them that it is special magic medicine that mOmmy made! "c'est très magnifique"
