Salad tossing summer......

Sorry for being super unoriginal in this.  I'm known for being a mad scientist in the kitchen.  But ones got to kick it ole school every once in a while.  And with this third pregnancy all I have been craving as of late (most likely due to its 90 damn degrees here) is salads all salads.  Simple quick salads.  Now I love stacking them high and letting them fly just like the rest of the world.  But recently I have been craving the ole school simple salads my grandma used to make.  Today while walking home from dropping my daughter off in the heat I was wanting my grandmas nice cold cucumber onion vinegar salad.  So that's what's on deck.  And I sense a theme of salads and things using cherries this summer.  So keep a look out for those recipes.

First offering grandma lundquists cucumber vinegar salad.  Mine is a little sassy because I use very different kinds of vinegars.   I make my own sage vinegar that is a must have in your salad making arsenal.  How do you make you ask?  Well it really could not be simpler.  Take some fresh sage, enough to fill a large mason jar, and cover it with regular vinegar.   Give a shake everyday for a week and then let it cure in a cool dark place for 4-6weeks.  Seive into another clean mason jar and you are in sage vinegar buisness.  Or do whatever herb makes you happy.  I have some rosemary vinegar in the works and basil vinegar in the works as well.  You can also use dried herbs just let cure for the full 6 weeks in that case and do 1/2 jar herbs and cover with vinegar.  Verses whole jar of fresh herbs.


Once you got your vinegar lets get salad tossing...  Ha ha I crack myself up....


Cucumber veg vinegar salad


2 cucumbers cut in 1/2 and thinly sliced
4 romaine tomatoes diced
1 half large red onion sliced
1 cup of sage vinegar
1 cup of apple cider vinegar (just use 2 cups if your sage vinegar is not ready yet)
1 tbs sugar
1/2 tea cracked pepper
1 tbs course sea salt


Add all ingredients to clean bowl and toss.  I then put into a Tupperware and let chill for 2-3 hrs.  It's even better the next day.  I double recipe so I can munch on it all week.... Perfect to bring to a gathering or serve on the side for dinner.  Or a nice in between pallet cleansing item for a course meal.

Can keep up to 2 weeks in airtight container and recipe serves 6...
