Summer Breakfast Confessions

Trying to make this summer a fun one for my two girls has been my top priority.  They are going to welcome their new sister very soon, so it's been very important to me to be submerging myself in making some loving memories for my cuties.  We have been swimming, building fun things, doing endless crafting and cooking.  It has been very fun, but I'm unfortunately slowing down with the due date rapidly approaching.  Although I never want my Children to associate food with love, I do want them to know that what I make is with love and also food is caring.  I want for them to love cooking one day as much as I do, as well as remember the things I made them and be able pull memories from the things we make together.  Wasn't that dreamy, well I'm just trying to make what I'm going to confess to have more finesse....

In the spirit of making summer fun and memorable we have been indulging in what I like to call breakfast Popsicles.  Here is why, well for starters I'm 20lbs heavier in July and momma is damn hot even at 8-9am...  Second I'm kinda hot so cooking breakfast right now over a hot stove is not appealing to me.  And finally, did I mention I'm hot, well I'll also mention I'm so tired and having some pre made Popsicles in the freezer to hand them to go along with their peanut butter toast or what not is really damn convenient.  You may say I am lazy, I say it's called ingenuity...  Smoothie pops are delicious, nutritious and so fun.

We have explored so many flavors this last month and I'd thought we would share what we are loving the most.

First things first let's talk smoothie recipes...

Smoothies are so easy to make, in my world it's just as easy as fruit, yogurt, protein powder, coconut oil, vegetable, and juice.....  That is it....  Having frozen fruit, and yogurt on hand is all you really need.  You can use whatever milk your family drinks instead of juice if you are not wanting to buy anything fancy.  Things that you may have in your pantry that are delicious adds to a smoothie pop are:

Almonds
Coconut oil
Chia seeds
Protein powder
Flavored extracts such as vanilla
Oats
Peanut butter
Shredded coconut
Cocoa powder
Grains

Here are some of our favorite combos.


PeachacoLada

2 cups frozen peaches
1 cup vanilla yogurt or plain
1/2 cup shredded coconut
1 scoop of vanilla protein powder
1tbs coconut oil
1 cup coconut milk

Blend and add to Pop molds....  Packed with vitamins, protein and love..


Strawberry Spinach Dream Machine

2 cups frozen strawberries
3 cups spinach
1 cup vanilla yogurt
1 scoop protein powder
1 cup apple juice
1 banana

Blend, pour in pop molds and enjoy...


Choco Peanut-butter Bliss

2 frozen bananas
1 cup vanilla yogurt
1 tbs cocoa powder
1/2 cup peanut butter
1 scoop of protein powder
1 cup soy or whatever kind of milk you have on hand
1 tbs chia seeds

Blend, pour in molds and enjoy...  Packing protein and potassium...


Almond Vanilla Oat Surprise

1 cup oats
1 cup vanilla yogurt
1tbs coconut oil
1 scoop vanilla protein powder
1 tea vanilla extract
1/2  cup almonds
1 cup almond milk

Blend, pour into pop molds and enjoy this protein and fiber packed pop...

Online is such a great free source for recipes but this book is one I've bought as a gift for a summer birthday and it is wonderful as well.




Just a few to get you started, you can get creative with it and add whatever you heart desires, I've made silly mixes like chia tea oat, blueberry flax, pineapple cucumber it's so fun to get creative.  And your kids will love it.  And I don't feel so bad about being a little sluggish in the morning because my babes have good stuff in their tummies....
