Banana Bread Dreams....

Still on my quest to make everything GF due to this pesky Celiac, I have finally mastered our weekly treat Banana Bread.  This is a bread that is super quick to make, you have all ingredients regularly if you are a baker.  Great for a gift or just the weeks breakfast.  We usually make 2 loaves seeings how my children require it for breakfast and dessert.  You can omit cranberries for raisins or change up the nuts.  This is a base recipe that you can't go wrong with.

  • 12 c butter
  • 1 c sugar
  • 2 eggs
  • 2-4 bananas crushed
  • 1 12 c brown rice flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 12 tsp vanilla
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 c dried cranberries 
  • ½ c chopped pecans
Topping:

1 Tbs oats
1 Tbs pumpkin seeds 

Method:
Preheat oven 350
In a large bowl cream butter, sugar, vanilla and eggs.  In a separate bowl add and mix well all dry items except nuts and crans. Mix in slowly all dry, make sure to not over work. Lastly fold in nuts and crans. Add to a greased loaf dish, I use coconut oil and sprinkle the pumpkin seed oat mixture on top of the mix.  Bake 60 minutes.  Let cool, can be frozen for up to 3 months for gift giving or quick breakfast or brunch.  Makes one loaf but I always double recipe.
