Grandma's Oatmeal Cookies


Recently I started exploring how to make all my Grandma's cookie recipes GF.  This is one of the ones that turned out pretty good if I do say so myself.  And low and behold I really didn't need to go out and buy special GF items.  These are all things folks with Celiac normally have.  I get very discouraged when I want to make baked goods recently and the ingredients list is super long and unpronounceable!  I need for things to be super simple as I ease into this whole Celiac thing.
So although we have been pretty GF as a family for years it is very different when it is a choice vs. a medically required lifestyle change.

These are super yummy cookies for tea or just a nibble!


1/2 c plus 6 TBS Softened butter
3/4 c firmly packed brown sugar
1/4 c sugar
2 eggs
1 1/2 c brown rice flower
3 c GF Oats
1 TSP vanilla
1 TSP baking Soda 
1 TSP Cinnamon
1/2 TSP salt
1 c cranberries
1/2 c walnuts or whatever nut you fancy

Method:
Preheat oven 350
Cream in this order butter and sugars, vanilla, eggs together in bowl.  In a separate bowl mix dried items in this order, flour, oats, BS, salt, cinnamon.  Incorporate the dry with wet 1/4 c at a time.  Add the cranberries and nuts in at the end folding in softly.
Drop by rounded TBS on cookie sheet baking for 8-10 minutes.  Be sure to let cool before removing from cookie sheet.   
Makes about 4 DZ based on cookie sizes.
