Asparagus Soup Recipe of the week!

 My girls love this soup!  They think it looks like swamp water, ;)  Whateves at least they eat it!  This is a lovely recipe and really quick!  It is great as a dinner party starter or to freeze and have in the freezer for unexpected guests!  I like to have it in the freezer for my La leche league food tree for when a new mommy has a baby, frozen soups are the best because I always have stuff in the freezer to swing by to them! 


Asparagus Soup

2 Bunches of Asparagus Cleaned and cut in 3's
1 small white onion sliced
4 cloves of garlic whole
4 Yukon gold potatoes
2 Boxes of veggie broth low sodium
olive oil
salt and pepper to taste!

In a large stock pot saute onion 3 minutes, garlic, potatoes, asparagus.  Cook for 5 minutes and add veggie broth!  Bring to a boil and then simmer for 20  minutes or until potato is fork tender, like really tender.  Take off the heat and with hand held blender blend, and it makes a super thick soup!  Great for a small first course, or divine with some yummy bread!  Freezes great!  And this recipe can serve up to 8 people for a dinner party!
