It is upon us, Rosh Hashanah which I have to admit would be my favorite time of the year. Accountability is very improtant to me, and this is when I can reflect on who I am and who I want to be the next year. Not to go into too much detail, here is my wish for the new year:

To aid us in our time of reflection there must be food my friends! Here is one of my recipes that gets made every year for this beautiful holiday! Coming to you traditional style (non vegan, with the vegan options of course)
Honey Cake for hopes of a sweet year!
Mel's Honey Cakes
1 cup honey (vegan re-placer 1/2 cup either maple syrup or agave)
1 cup applesauce
3 eggs or if you are vegan (like me) flax egg re-placer
11/2 teaspoon ground cinnamon
1⁄2 teaspoon ground clove
1⁄2 teaspoon ground nutmeg

1/2 teaspoon ground cardamon
1 cup pastry flour
1 cup pastry flour
1 cup wheat flour (of course all purpose works swell if that is what you have)
1⁄2 teaspoon baking powder
1 teaspoon baking soda
1 cup strong brewed coffee
1 teaspoon baking soda

coconut oil to grease pans
In a large bowl, mix together the first 3 ingredients.
In a separate bowl, combine the flour, baking powder, spices and baking soda.
Add the flour mixture to the wet stuff, alternating with the coffee; beat well.
Put into 2 greased loaf pans!
Bake at 325F 60-70 minutes based on oven... I take a look after 60 minutes!In a large bowl, mix together the first 3 ingredients.
In a separate bowl, combine the flour, baking powder, spices and baking soda.
Add the flour mixture to the wet stuff, alternating with the coffee; beat well.
Put into 2 greased loaf pans!
Serves up to 6 friends per loaf!
I like to add some apple chutney to top with powdered sugar to be extra sassy! l'shanah Tovah!
