Because I'm that girl you know I'm not going to go the season without putting up a pumpkin recipe. So here is a good one. It is inspired by one I saw on Pinterest but I had to totally revamp of course to make it VEGan and GF.
Packed with yummy nutritious ingredients, this one is a good one. Buuuuuuut my favorite part is that it serves as my dessert fix while I try to chart through this whole get fit thing.... My girls love it, and it really does make you feel full and gives a little energy boost (or mini sugar rush via the choc chips).... Whatever the case you will be a happy camper.
•Pumpkin Energy Bites•
1 C quick cook GF oats
1 1/2 tsp cinnamon
1/4 C peanut butter
2 tbs brown rice syrup (or maple syrup)
2 tbs chia seeds
2 tbs grated coconut
1/4 C almond slices (I use those insanely good Tj's honey roasted ones ooooooeeeeeee!😜
1/4 C pumpkin purée
1 tbs honey (sub agave for a la vegan)
1 tsp vanilla
1 tbs chocolate chips
Mix all ingredients in a medium bowl,
Scoop out dough and roll into 1-2 inch balls. I like to line what I'm storing them in with parchment and do a piece of parchment between each layer. Store in fridge....
Makes 15 balls.
